Carrot Fritters with Carrot Hummus

Meals: Serves 8

This delicious carrot hummus can also be served as a dip.

Carrot fritters

  1. Mix all ingredients together.
  2. Heat a heavy-based pan. Spray with a little oil and add large tablespoons of the mixture.
  3. Cook until brown on one side. Turn and cook on the other side.
  4. Serve topped with a dollop of carrot hummus and garnish with microgreens.

Carrot hummus

  1. Place all ingredients in a food processor and process until smooth.
  2. Serve on top of carrot fritters.

Makes 8-10

  • 2 carrots, peeled and grated
  • 1 onion, finely chopped
  • 2 chillies, deseeded and finely chopped
  • 2 tsp cumin seeds
  • 1 tsp fennel seeds
  • 100g cornflour

 

Carrot hummus

Makes about 2 cups

  • 2 carrots, peeled and grated
  • ¼ cup olive oil
  • 2 cups cooked chickpeas
  • 1 clove garlic, peeled
  • juice of 1 lemon
