Red Onion & Mushroom Salad

Cooking Time: 1 mins Meals: Serves 4

Great with barbecued sausages.

  1. Slice onion into wedges.
  2. Heat oil and garlic in a large heavy based pan.
  3. Add mushrooms and stir fry until lightly brown.
  4. Add onions and continue cooking for 1-2 minutes, or until onions are heated through.
  5. Place spinach in a bowl or serving platter. Top with onions and mushrooms and serve.


Ingredients

  • 1 large red onion
  • 1 Tbsp rice bran or canola oil
  • 1 tsp chopped garlic
  • 250g button mushrooms
  • 2 cups spinach leaves
